carrot soup recipe | gajar ka soup recipe | cream of carrot soup with detailed photo and video recipe. a healthy creamy soup recipe made with blended carrot mixture as its primary ingredient. there are several ways the carrot soup can be prepared and the most common one are carrot broth or cream based soup. however in this recipe i have not used cooking cream and doesn’t falls into cream style soup category.

carrot soup recipe | gajar ka soup recipe | cream of carrot soup with step by step photo and video recipe. the recipe for carrot soup is extremely simple and can be prepared within minutes. yet it is one of the healthy soup recipes as it is prepared with fresh carrots and other choice of veggies. moreover it can be easily extended by adding other vegetables to have a mix and match flavoured soup.
i am huge fan of soup recipe and it is one of the most common recipe i prepare it frequently for lunch and dinner. especially during winter, it is one of the must recipe just before the dinner. in fact i prepare it in many ways and flavour it with different vegetables. the most common vegetables i add to this recipe is either potatoes, sweet potatoes and even cauliflower and beans. in addition i prepare the same soup with ripe tomatoes to prepare tomato carrot soup. so this can be a easy variation to your normal tomato soup as well. having said that, this is a normal tomato soup recipe and i have added mixture of potatoes and fresh carrots which makes it a healthy combination of soup recipe.
even though it is a simple and easy soup recipe, yet some tips, variations and serving suggestions for a ideal carrot soup recipe. firstly, and more importantly i would heavily recommend to use fresh carrots for this soup. also make sure to peel the carrots before using them to have a rich and dark coloured soup. secondly, i have added vegetables like potatoes and even onion to make it more flavourful. however you can totally skip those veggies to make it plain gajar ka soup recipe. lastly, if you wish to prepare the broth style carrot soup than you can skip the blending of boiled veggies. you can simply spice the boiled veggies with pepper and italian herbs to prepare broth style carrot soup recipe.

Ingredients
- 2 tbsp oil
- 2 clove garlic
- 1 inch ginger
- ½ onion, sliced
- 4 carrot, roughly chopped
- ¼ potato / aloo, cubed
- 1 tsp salt
- 2 cup water
- few mint / pudina
- ½ tsp pepper, crushed
Instructions
firstly, in a pressure cooker heat 2 tbsp oil and saute in 2 clove garlic and 1 inch ginger.
further saute ½ onion for a minute.
also saute 4 carrot, ¼ potato and 1 tsp salt.
now add 2 cup water and few mint leaves.
cover and pressure cook for 4 whistles or till carrot gets cooked well completely.
once the pressure relases, open the cooker lid and remove mint leaves.
cool the mixture completely and transfer the cooked carrot to blender.
blend to smooth paste without adding any extra water.
transfer the prepared carrot paste into kadai along with leftover water from cooked carrot.
mix well adjusting the consistency as required.
boil for 2 minutes or till the soup thickens.
further add ½ tsp crushed pepper or as required.
finally, serve carrot soup recipe topped with fresh cream or pepper.

notes:
- firstly, carrot can be cooked in open vessel, however it takes more time.
- also adding potato is optional, but it helps to get creamy texture.
- additionally, add cream just before serving for more rich flavour.
- finally, carrot soup recipe can be stored in refrigerator up-to a week and enjoyed.
