Ingredients and substitutions

I like using Medjool dates in this recipe because they’re bigger than most other varieties of dates which makes them perfect for stuffing. They’re also particularly flavorful and moist.

Sautéed onions add a savory layer of flavor to these pecan stuffed dates. You can use any type of onion you like in this recipe.

Toasted pecans add a cozy, festive flavor and plenty of richness to these date appetizers. You can substitute other nuts such as walnuts or cashews if you prefer. Or for a nut-free version you can substitute toasted pumpkin seeds or sunflower seeds.

Fresh sage adds a warm, woodsy flavor to these dates. You can substitute other fresh herbs such as rosemary, tarragon, or chives if you prefer.

How to make these date appetizers

These date appetizers are easy to prepare. Start by adding the finely chopped onions, extra virgin olive oil, and salt to a large nonstick pan on the stove set to medium heat. Sautee for about 15 minutes or until the onions are softened and golden brown. Once the onions are golden brown, add the finely chopped fresh sage and sautee for two more minutes.

Remove the onion mixture from the heat and allow it to cool off while you remove the pits from the dates. Next you’ll use your fingers to open up the dates and coax them into a bowl shape.

Preparing these date appetizers in advance

You can prepare these a couple of days in advance if you like (if you’re making these for the holidays that might make things easier). Just get the dates stuffed and ready to go, then store them in an airtight container in the fridge until party time. Be sure to allow these date appetizers to come to room temperature before serving.

Making this for a crowd

You can scale this recipe up if you’re feeding a crowd. Two of these pecan stuffed dates per person should be perfect.

Do pecans and walnuts go together? ›

It would to me. I eat them both all the time. The pecan is sweet and the walnut is more savory. They balance each other out.

How do you toast pecans on top of the stove? ›

Toasting Pecans on the Stove Top

Set a medium or large skillet on the stove over medium-high heat. When the skillet is hot, add the pecans. After 1 minute, stir the pecans occasionally until they are fragrant and mottled with golden brown spots, 6 to 7 minutes.

Should I toast nuts in pan or oven? ›

Best Methods for Toasting Nuts

No matter how patient you are and how low you keep your heat, the skillet method regularly yields an uneven and improperly toasted nut. I'm sorry to say it, but if you want pristine roasty-toasty nuts, you're going to have to turn your oven on.

Which nut is healthier walnuts or pecans? ›

As you can see, walnuts and pecans are both winners in terms of nutritional value. While pecans have fewer calories and more fiber, walnuts offer a higher degree of protein. Whichever you choose, you'll enjoy heart-healthy nutrition with anti-inflammatory, antioxidant, and healthy cholesterol properties.

Which nut is better walnuts or pecan? ›

Is one healthier? Both pecans and walnuts are nutritious, but they have slightly different nutrient profiles. While pecans are higher in fat and calories, walnuts are higher in protein and omega-3 fatty acids. When it comes to choosing between the two, one tree nut isn't “healthier” than the other.

Which is better for your heart pecans or walnuts? ›

If heart health is your focus, walnuts are the best choice because of their high omega-3 content. Meanwhile, pecans are the best choice for lower blood sugar because of their low carb and high fiber levels. Those seeking to incorporate more protein into their diet should opt for walnuts.

Is it better to toast pecans whole or in pieces? ›

It's best to toast nuts whole, then to chop them if you need smaller pieces.

What is the difference between roasted and toasted pecans? ›

Toasted pecans are not roasted pecans. Toasted pecans are cooked in a pan on the stove. I prefer to make roasted pecans in the oven because the pecans cook more evenly this way.

Why do you soak pecans before roasting? ›

Wet pecans allow the salt to stick easily to the nuts. Plus, soaking nuts helps neutralize enzyme inhibitors, which can harm your digestion, and reduce phytates, which decrease nutrient absorption. Just submerge your nuts in water while the oven is heating up and you'll be good to go.

How do you toast nuts without burning them? ›

You toast nuts on a cookie sheet [or sheet pan] in a preheated oven set on a low heat*. The low heat is crucial because nuts burn both easily and quickly. I toast nuts at 250 F. This is a low temperature, but I find that the higher I set the temperature, the higher the chances of burning the nuts.
