She usually gets them ready the night before for best results, but has also done them with about a 5-minute marinade time and they still tasted great.

And, this is what makes this recipe so quick. Especially, if you use new potatoes, you don't even need to peel them. I usually use about1 to 1 1/2 potatoes per person. Serve these hot out of the oven. Theyare crispy and delicious!

German Recipe?

This recipe for oven roasted potatoes comes from my German friend, Heidi. You'll find her recipes sprinkled throughout this website. She's an amazing cook as well as an amazing friend.

For this recipe, she has a "cutter", almost like a "french fry cutter". Her potatoes are therefore smaller and the roasting time quicker. I just cut mine in nice sized chunks.

FAQs

Why do you soak potatoes in water before roasting? ›

Soaking potatoes in water helps remove excess starch. Excess starch can inhibit the potatoes from cooking evenly as well as creating a gummy or sticky texture on the outside of your potatoes. Cold water is used because hot water would react with the starch activating it, making it harder to separate from the potatoes.

What is the best oil for roasting potatoes? ›

Neutral, low-cost oil such as vegetable oil, canola oil, safflower oil, peanut oil, corn oil, coconut oil, avocado oil, etc., work well for roasting. These oils have a high smoke point, allowing the potatoes to get very hot to achieve maximum crispiness.

How does Gordon Ramsay make the best roast potatoes? ›

In a video online, Gordon explained: “For crispy roast potatoes, you can depend on them, my tip is to parboil them, leave them to steam dry, then sprinkle them with semolina or flour, and then give them a good roughing up.”

What happens when you marinate potatoes? ›

Simply soaking your potatoes in a tangy salt pickling vinegar brine before roasting or frying them can make quite a difference. Marinating your potatoes is the best way to infuse them with flavor, deep into their center, instead of just sprinkling a spice mix on top or dipping them into a sauce.

What happens if you don't soak your potatoes in water? ›

Peeled and refrigerated potatoes that aren't soaked will still be safe to eat the next day, but the chemical reaction caused by exposure to oxygen will turn your spuds a weird pinkish/brown color. Not that there's anything necessarily wrong with that, but most people prefer their mashed potatoes white and fluffy.

What happens if you don t soak potatoes before air frying? ›

While it may seem like a pain, soaking the potatoes in hot water for 10 minutes prior to cooking them in the air fryer is essential. The water removes excess starch, allowing the fries to be their crispiest. Instead of soaking them in large bowl of cold water, I like to use hot water to cook the potatoes slightly.

Why can't I get my roast potatoes crispy? ›

Parboiling the potatoes is a good start, but if they're not getting crispy during roasting your temperature isn't high enough or there's too much moisture.

How do you keep roast potatoes crispy? ›

If you want to make this roast potatoes day before recipe and keep the potatoes crispy, ensure you put them in hot oil before baking them. This will help the potatoes stay crispy. If you're preparing roast potatoes in advance and find they have gone soggy in the fridge.

Can I use extra virgin olive oil for roast potatoes? ›

In the oven dish add the potatoes and drizzle with plenty of Filippo Berio Extra Virgin Olive Oil (at least 2tbsps), season with the salt and pepper and add the rosemary. Should you boil potatoes first before roasting? ›

Boil chunks of potato until they're just tender, toss them none-too-gently with fat (ideally beef drippings) to rough up their surface, then roast them until they're crisp and crackling. The boiling and roughing-up steps are the real keys.

Why do you soak potatoes in milk? ›

A great way to enliven potatoes which have been stored since last year's harvest. The milk gives them a creamier texture and a little more body and richness. Peel the potatoes and slice them into pieces at least 1cm thick. Put them into a saucepan and cover with the milk.

How long should you soak potatoes in water? ›

If you're pressed for time, the slightly sticky, cut potatoes should be soaked for a minimum of 15 minutes. However, a longer soak time may allow more starch to be removed. So, if you can prep the fries ahead of time, a few hours of soaking can help make them even crispier.

How long can you leave potatoes in water before roasting? ›

How Long Peeled and Cut Potatoes Last in Water. You should store peeled and cut potatoes in water for 24 hours to ensure the quality of your final product. "If you drain the potatoes and notice they are turning brown, that they've started getting soft, or if they are slimy you should discard them," says Brigman.

How long can potatoes sit in water before cooking? ›

How long can peeled and cut potatoes sit in water before cooking, before they begin taking on too much water? A: We usually recommend no more than 24 hours. You can keep the potatoes from absorbing the water by making sure the water is not salted, and is chilled (you can even add ice to the water).

Should you put salt in water when soaking potatoes? ›

Covering in water helps the potato from turning a dark color. Adding salt to the water to form a brine mixture may seem helpful and can impart a flavor to the potato strips, however, salt is a major contributor to the fry oil breaking down prematurely, so I don't recommend it.
