Cooking with coconut flour is a real challenge and I made these cookies 5 times before I got them right! Almond flour is much more forgiving for gluten-free baking but I wanted a mixture that would create the right texture. I had many happy taste testers with this recipe so I hope you enjoy it!

Keto, Low Carb and Paleo Chocolate Chip Cookies Recipe
This Keto, Low-Carb and Paleo Chocolate Chip Cookies Recipe made with both coconut flour and almond flour is perfect for any occasion! This deliciously rich keto dessert is great for gifting and sure to delight every low carber!

Ingredients
- 3eggs
- 1/2cuppalm shortening or softened butter
- 1teaspoonvanilla extract
- 1/2tspteaspoon cinnamonoptional
- 1/2teaspoonnutmegoptional
- 1/3cupcoconut flour
- 1/2teaspoonbaking soda
- 1/2teaspoonsea salt
- 1cupalmond flour
- 4-6ouncesunsweetened dark chocolatechopped
Sweetener
- 3/4cupBirch xylitol or
- 3/4cupSwerve or
- 2teaspoonStevia powder extract
Instructions
Preheat the oven to 350° F.
Mix the eggs, palm shortening or butter, vanilla, cinnamon, nutmeg, and sweetener in a large bowl.
Sift the coconut flour into a small bowl then add the baking soda, salt, and almond flour.
Combine the two mixtures and add the chocolate chunks.
Place parchment paper on cookie sheets.
Spoon the dough on the cookie sheet in 1-inch mounds.
Bake for 15-17 minutes until golden brown.
