The Broccoli & Goat Cheese Combo

Broccoli & goat cheese is a killer combination. I first discovered the flavor pairing as I was working diligently to use up a Costco-sized stock of goat cheese in my refrigerator. After popping a sheet panof broccoli in the oven, I decided to top it with a bit of goat cheese while it was roasting. The result? So. Damn. Good.

The goat cheese melts into a creamy, tart and tangy topping that pairs beautifully with the broccoli. If funky cheeses are pleasing to your palate, you are going to love this recipe.

It's an earthycombo, but not overpoweringly so. My toddler, who will not eat broccoli or goat cheese when presented exclusively, devoured this soup without hesitation. Thisall leads me to believe the broccoli & goat cheese pairing is universally delicious; my son is as picky as they come. His approving response of "good mom," followed by continuous slurping has really sealed the deal on this matter.

The Broccoli & Goat Cheese Soup Recipe

If you're a long time reader, then you already know that I love easy food just as much as I love delicious food. My happy zone is when you can enjoy an uncomplicated meal without sacrificing flavor. This broccoli & goat cheese recipe is the perfect marriage of simple and tasty.

Bring a mixture of chicken broth, heavy cream, broccoli, and goat cheese to a boil, then drop it down to a simmer. Add in salt, then blend it. You can use an immersion blender if you prefer a handheld device with minimal cleanup, or a traditional blender if you like to make the machine do all the work for you. Either way, be careful blending the hot soup; it's... hot.

Once it's thoroughly blended, I like to do a quick taste test to see if more salt is needed. I'd recommend you do the same, especially since the saltiness of the broth varies brand to brand. Garnish the broccoli & goat cheese soup with chopped almonds, then serve it up nice and warm.

I just started Keto this week, and found this recipe and had to make it! It was absolutely delicious! I found that the soup was a little thin, which had me pause for a minute, but then I tasted it and fell in love! I'm pretty sure this is going to be one of my food staples! I also can't wait to try the Thai Coconut soup recipe, it's one of my favorite foods, and it can be hard to find a good one at restaurants.

Great, but keto inhibits testosterone production.
It's no fault of yours but some guys are receiving poor advice from men's blogs implying the benefits of keto. Even Josh up there is misinformed.

Why won t my cheese melt in my broccoli cheddar soup? ›

Grate the cheese yourself.

Pre-shredded cheese is often coated in anti-caking agents that can prevent the cheese from melting into a lusciously creamy soup. To ensure that your broccoli cheddar soup has the best smooth and creamy texture, buy a block of cheese and grate it yourself.

Why do you avoid simmering your soup after adding the cheese? ›

At a temperature of 150 or so, the protein bonds in the cheese break down and as a result, too much fo the moisture escapes too quickly. Keep the heat very low, and make sure the cheese is one of the last things added to the soup.

Sometimes soup just needs to simmer longer to reach the perfect consistency. Check to see if the vegetables are tender, and then taste the broth. If the soup tastes a bit watery, give it more time.

Can you use pre shredded cheese in soup? ›

Will cheddar cheese melt in soup? Cheddar will definitely melt here — but you'll want to start with block cheese for this cheddar potato soup. Pre-shredded cheese, though convenient, is coated with an anti-clumping agent that interferes with the cheese's ability to melt smoothly and evenly.

Why does cheese get gummy in soup? ›

Save this answer. This is a combination of the type of cheese and too much heat. Some cheeses melt more readily (mozzarella for example), but all of them will seize up if they are heated too much too fast - the proteins 'curl up' and separate from the fat and water in the cheese.

How do you add cheese to soup without clumping it? ›

To prevent cheese from curdling, it's important to add it to the soup slowly and at a lower temperature. Gradually incorporate small amounts of cheese into the hot soup while stirring continuously. Also, avoid boiling the soup after adding the cheese.

Why does my broccoli cheddar soup look curdled? ›

High Heat: Cheese is sensitive to high temperatures. If you add cheese to your soup when it's too hot or boiling vigorously, it can become overcooked and develop a grainy or curdled texture rather than melting smoothly. To avoid this, reduce the heat to low or medium-low before adding the cheese.
